Sweetcorn, Red Pepper and Feta Fritters

Introduction

Quick easy and rather tasty. Nice for a lunch with a green salad.

Ingredients

Serves: 4 hungry people

  • 1 cup self-rising flour
  • 2 eggs
  • 1 teaspoon salt
  • ½ cup soda water
  • freshly ground pepper
  • 2 cups sweetcorn (if frozen defrost first)
  • ¼ diced red bell pepper
  • 2 finely sliced scallions
  • 2 tablespoons chopped fresh basil
  • ½ cup feta cheese (cut into small cubes)
  • oil (for shallow frying)

Method

  • Mix the first 5 ingredients until smooth.
  • Add the remaining ingredients and let the mixture stand for 10 minutes.
  • Whilst the mixture is standing, heat oil in a large frying pan. Cook spoonfuls in the hot oil until golden brown.
  • Place cooked fritters on kitchen paper to absorb excess oil.
  • Additional Information

    Sweet chilli sauce or home made tomato ketchup would go well with the fritters.

    • This mix was too fluid, I needed to add more flour in order to obtain nice round fritters.
