                                        In a large pan, bring the water to the boil.  Then remove from heat. Add the zest, juice and chopped lemons to the pan  Next add all the sugar and stir until the sugar has dissolved.  Cover pan and leave overnight. Strain out the bits of lemon and pips.  Decant into jug and keep in fridge.
