Ingredients

Serves: 4

Metric Cups
  • 1¾ kilograms mild-cure gammon joint (unsmoked)
  • 3 litres apple juice
  • 250 millilitres cider
  • 1 small onion
  • 2 cloves
  • 3 cloves garlic
  • 2 bay leaves
  • 2 tablespoons honey
  • 3⅞ pounds cured but uncooked ham (unsmoked)
  • 5¼ pints apple juice
  • 8⅘ fluid ounces hard cider
  • 1 small onion

Method

Roast Gammon is a community recipe submitted by janiceward and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • You can soak the gammon over night in cold water, but i think this is not necessary.
  • In the largest pot you have put the garlic clove, push the cloves into the onion and add the bay leaves into the pot.
  • Put the gammon joint in.
  • Pour 1 litre of the apple juice over, then the cider, now depending how full your pot is add more apple juice- but the make sure the gammon is submerged.
  • Bring to a boil and get rid of scum.
  • Simmer for 1hr and 20 minutes.
  • Turn off the ham and leave in the liquid until you need it.
  • Heat the oven to 190 C
  • Cut of excess fat and put the diamond Kris cross on the top.
  • Spread two table spoons of honey over the top.
  • Roast in a big tin in the oven for 20 minutes-but keep your eye on it and make sure it does not burn.

    • Reduce the cooking liquid right down, add heaped teaspoon of grain mustard and a dollop of creme fraiche for a lovely sauce, serve with roast garlic & rosemary roast potatoes and season veg.
