Introduction

A Welsh traditional tea loaf, this recipe is very similar to Glitters Tea Loaf and is sooo easy, its done in a large saucepan so not too much washing up. I use a 2litre tin but a 2lb tin would be OK This also makes an excellent Bara Brith Bread and Butter Pudding. Hope you enjoy!

Ingredients

Serves: 8

  • 9 ounces mixed dried fruit
  • 6 ounces superfine sugar
  • 4 ounces butter
  • 1 teaspoon baking soda
  • 1 cup water
  • 2 large eggs (beaten)
  • 4 ounces self-rising flour
  • 4 ounces all-purpose flour

Method

  • Pre heat oven to 140C ( I have a fan oven so not sure what that would be maybe 150ish C)
  • Line the tin with greaseproof paper/liner. Place the first 5* ingredients in a saucepan and heat gently, it'll become all fizzy because of the bicarb, leave to cool.
  • When cool add eggs and finally sieve in the flours.
  • Place in tin and bake for 30mins when I normally put some foil over it to stop it catching, bake for another 20-30mins until nicely risen and firm to the touch.
  • Leave to cool and serve sliced spread with butter and enjoy. It does get better with keeping they tell me but not found out yet as it disappears!
