Quick and Easy Spaghetti

Boil a saucepan of water (Little tip, don't add salt to the water whilst boiling because it will take longer. Instead pour the salt on to the lid of the pan! Don't ask me why but it makes the water boil faster that way!) Once the water is boiled, cook the spaghetti in the pan for as long as suggested on the packet or until the pasta is soft but still a bit chewy. Drain the pasta and return to the pan. Add the tin of tomatoes and the crushed garlic. Whilst heating though the pasta and tomatoes on a very low heat toast the pine nuts in a dry frying pan and add to the pasta when lightly golden. Finally add the oregano, use more or less oregano depending on your own tastes. Finally, serve in warmed bowls.
Introduction
I started cooking for my family when I left University and was looking for a job. However some nights I couldn't bring myself to cook big hearty meals, especially when half my family would be out at rehearsals or meetings so I came up with this easy, low calorie dish that has a lot of what you need from a meal.

- 1 tin diced tomatoes
- ½ clove garlic
- 1 handful pinenuts (a small handful)
- 1 teaspoon oregano
