Introduction

This cake is utterly divine. Two layers of the same mixture, the bottom half baked, and the top half chilled. It is especially divine with fresh cream and blackberry coulis, or with fresh fruit such as strawberries.

Serves: 8-10

Metric Cups
  • 100 grams butter (soft)
  • 6 eggs
  • 151 grams sugar
  • 200 grams chocolate (milk or dark)
  • 100 grams pecan nuts (chopped)
  • 4 ounces butter (soft)
  • 6 eggs
  • 5 ounces sugar
  • 7 ounces chocolate (milk or dark)
  • 4 ounces pecan nuts (chopped)

Method

  • Melt the chocolate in a bowl over a saucepan with boiling water. Beat the egg whites with half the sugar until stiff.
  • In a separate bowl, beat the butter, egg yolks and the rest of the sugar for a few minutes until really creamy. Add the melted chocolate. Fold the egg whites into the chocolate mixture, and add the nuts.
  • Put half the mixture into a flan dish and put the other half in the fridge.
  • Bake flan for 25-30 minutes at 170ºC. When the baked half is completely cooled, spread the refrigerated mixture over the top.
