Thanks to my mother's hairdresser for this one. Do not use muddy farmed prawns - you want fresh, salty, sea-tasting specimens.

Ingredients

Serves: 4

Metric Cups
  • 1 kilogram prawns (cooked, peeled and deveined)
  • 2 large mangos (ripe but firm, peeled and diced)
  • 1 large avocado (ripe)
  • 1 lettuce (washed and torn)
  • 3 shallots (sliced finely)
  • 125 millilitres coconut cream
  • 1 teaspoon fresh ginger (finely grated)
  • 2 tablespoons lemon juice
  • 2 teaspoons sugar
  • ½ teaspoon curry powder
  • ¼ teaspoon turmeric
  • 2⅕ pounds shrimp (cooked, peeled and deveined)
  • 2 large mangos (ripe but firm, peeled and diced)
  • 1 large avocado (ripe)
  • 1 lettuce (washed and torn)
  • 3 shallots (sliced finely)
  • 4 fluid ounces coconut cream
  • 1 teaspoon fresh gingerroot (finely grated)
  • 2 tablespoons lemon juice
  • 2 teaspoons sugar
  • ½ teaspoon curry powder
  • ¼ teaspoon turmeric

Method

  • Mix the dressing ingredients in a jar: coconut cream, ginger, lemon juice, sugar, curry powder and turmeric.
  • If you cook your own prawns, make sure they have chilled before placing them in the salad bowl.
  • Arrange other ingredients in a large flat salad bowl/platter, pour over the dressing and serve.
  • You could also use bbq chicken or experiment with other seafood in this salad.
