Ingredients

Serves: 0

Metric Cups
  • 4 egg yolks
  • 65 grams caster sugar
  • 500 millilitres whipping cream
  • 1 vanilla pod (seeds)
  • 4 egg yolks
  • 2¼ ounces superfine sugar
  • 18 fluid ounces heavy cream
  • 1 vanilla bean (seeds)

Method

  • Mix yolks, sugar and vanilla thoroughly with an electric mixer, the sugar needs to be totally melted
  • Little by little, add the cream
  • When all of the cream has been added, keep mixing until it has a thick, custardy consistency
  • Pour into an ice-cream mould with lid on! You don't even have to stir this while freezing!
  • Feel free to add eg. chopped chocolate, or try Bailey's liqueur (add to the egg/sugar mix), 50 ml will do
