I had some leftover rhubarb juice from the Rhubarb Fool in Forever Summer.... and invented this fresh and summery drink. Beautiful colour!

I had some leftover rhubarb juice from the Rhubarb Fool in Forever Summer.... and invented this fresh and summery drink. Beautiful colour!

Ingredients

Serves: 1

Metric Cups
  • 1 kilogram rhubarb
  • 300 grams sugar
  • 1 vanilla pod (split)
  • limoncello
  • 2⅕ pounds rhubarb
  • 11 ounces sugar
  • 1 vanilla bean (split)
  • limoncello

Method

Rhubarb Lemon Drink is a community recipe submitted by klp66 and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Mix sugar with rhubarb, put in an ovenproof dish and stick the vanilla pod into the mixture.
  • Bake for one hour.
  • Sieve rhubarb (use pulp for a dessert) - keep the juice.
  • For one drink: Mix 50 ml juice with water to taste and 30 ml Limoncello.
  • Serve in long-drink glass with ice cubes.
