Special Baked Chicken

Introduction

This is a very easy recipe. And it's delicious, too!

Ingredients

Serves: 4-6

  • 1 boned chicken (with skin)
  • 1 medium onion
  • 3 tablespoons sliced olives
  • 1 chicken broth cube
  • 2 lemons (juice of)
  • 250 millilitres white wine
  • 28 grams butter
  • 1 tablespoon olive oil
  • freshly ground pepper (calabrese pepper or another dried pepper you prefer)
  • 255 grams sliced bacon

Method

  • Melt butter with olive oil and put on an oven dish.
  • Wash the chicken very well and place over butter-oil mixture. Crumble the chicken bouillon cube and spread inside the chicken. Then, put the peeled onion and the olives inside the chicken.
  • Pour the wine and lemon juice and sprinkle the peppers on the chicken (the quantity depends on how hot you want it). Cover the whole chicken with the bacon slices.
  • Cover with tinfoil and bake in the oven at 230ºC for 1-1/2 hour, then remove the foil and bake at 280ºC for another 30 minutes.
  • If you like, you can put some peeled and lightly boiled potatoes to roast with the chicken in the last 30 minutes. You should moisten the chicken one or twice during the baking process with the gravy on the dish.
