porkchops smothered in a rich tomatoey spicey sauce...delicious over rice

  • pork chop
  • ½ can refried beans
  • jalapeno peppers
  • mushrooms
  • onion
  • tinned tomatoes (with chilli)
  • chilli powder
  • spring onion
  • salt
  • pepper

  • season pork chops with salt pepper and chilli powder pan fry in a little olive oil to the pan
  • add diced jalapeno, onion and quartered mushrooms cook a while until soft add canned tomatoes and 1/2 can water add 1/2 C refried beans to thicken sauce
  • cook for desired time, I cook mine until the pork chops are tender serve over rice.
