Poached Eggs in Tomato Sauce

Introduction

I would like to share a breakfastrecipe with you. It is a little plight, but worth it (excuse my hopeless English! I am trying to translate from Swedish)

Ingredients

Serves: 4-6

  • 6 eggs
  • 1 onion
  • 1 clove garlic
  • 8 rashers bacon
  • 1 tin diced tomatoes
  • 3 tins tomatoes
  • ½ lemon
  • ½ teaspoon sugar
  • salt
  • pepper
  • tabasco (or strong chilli sauce)
  • 250 millilitres white wine
  • thyme
  • olive oil
  • sourdough

Method

  • Preheat the oven to 150 C.
  • Chop the onion fine. Shred bacon fine. Fry bacon. Put in the onion and some of the thyme. Stir. Add pepper and sugar. Pour in the tomatos. Press lemon juice in. Add some tabasco and the wine. Let the sauce boil/simmer 10 min.
  • Crack the eggs carefully into the sauce. Hold the egg on the surface of the sauce when you carefully put it into the sauce.
  • Sprinkle over some lemon zest and some thyme.
  • Pour over some olive oil (but not on the eggs).
  • Put the pan in the oven 10-15 min. Serve with bread! Hope you like it!
