Vanilla Bean Cupcakes With Vanilla Bean Icing

Introduction

An easy, quick recipe for cupcakes

Ingredients

Serves: 12 medium sized cupcakes

For the Batter

  • 375 millilitres all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 125 millilitres unsalted butter (at room temperature)
  • 250 millilitres granulated sugar
  • 2 large eggs
  • 125 millilitres milk (you can use 2% if you like)
  • 1 teaspoon vanilla bean paste (or use one vanilla bean)

For the Icing

  • 125 millilitres unsalted butter (at room temperature)
  • 500 millilitres confectioners' sugar
  • 1 teaspoon vanilla bean paste
  • 3 tablespoons milk

Method

Vanilla Bean Cupcakes With Vanilla Bean Icing is a community recipe submitted by miss emmalou and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Cupcake batter: Preheat oven to 350 degrees F. Line cupcake pan with paper cupcake liners.
  • In a medium bowl, sift flour, baking powder and salt; whisk together briefly to mix. Set aside.
  • In a large bowl combine butter and sugar; cream together until mixture is light and fluffy.
  • Add eggs and beat until well combined. In a small bowl stir the milk and vanilla paste or vanilla bean together. Alternately add the flour mixture, then the milk to the batter, beginning and ending with the flour mixture, mixing on low speed until combined.
  • Spoon the batter into the liners, about 2/3 full. Bake cupcakes for around 20 mins (depends on your oven), until the cakes are pale golden and spring back when gently pressed on top.
  • Cool in the pan for 5 mins then turn onto wire rack.
  • Icing: In a medium bowl beat the butter until fluffy; add the sifted confectioners sugar and beat until smooth.
  • Add vanilla paste and enough milk until icing is smooth and creamy (around 5 mins).
  • Top cooled cupcakes with icing and decorate as desired.

    • Delicious and so easy! The double vanilla bean flavour made the cupcakes so moist and flavorsome - beautiful yummy soft cupcakes! I added a square of white chocolate in the centre to make it extra special :)
