Armanian Salad

Introduction

I just finished my leftovers, a part of Christmas dinner. This salad is easy to make, and can be made several hours ahead of time. It's very pretty, especially in a clear bowl, and has nice festive holiday colors. And it makes a great leftover snack!

Ingredients

Serves: 4-6

For the Salad

  • 2 cups diced cucumber
  • 1 cup sliced celery
  • 1 cup sliced radishes
  • 1 cup kalamata olives (pitted and sliced)
  • ⅓ cup toasted pinenuts

For the Dressing

  • 6 tablespoons olive oil
  • 4 tablespoons white wine vinegar
  • salt
  • pepper

  • Chop the vegetables and put in a bowl. Toast the pine nuts, and add them. Add the olives, and stir. Whisk the oil and vinegar with salt and pepper to taste, and pour over the salad. Mix well.

    I have no idea how Armenian this salad is; it's a recipe that's been in use in my family for a few decades, and that's what we've always called it.
