When it is cold and gloomy outside everyone loves the hot heart warming snacks. A very Indian snack. The hand made dough can be replaced with the ready made packed spring roll sheets.

Ingredients

Serves: about 8 people

Metric Cups

For the Dough

  • 250 grams plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 4 tablespoons vegetable oil

For the Filling

  • 250 grams sweetcorn (boiled)
  • 1 large onion (chopped)
  • 1 tablespoon ginger and garlic paste
  • 2 teaspoons green chilli (chopped)
  • 1 teaspoon salt
  • 2 large potatoes (boiled and mashed lightly)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 500 millilitres groundnut oil (for deep frying)

For the Dough

  • 8⅚ ounces all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 4 tablespoons vegetable oil

For the Filling

  • 8⅚ ounces sweetcorn (boiled)
  • 1 large onion (chopped)
  • 1 tablespoon ginger and garlic paste
  • 2 teaspoons green chile (chopped)
  • 1 teaspoon salt
  • 2 large potatoes (boiled and mashed lightly)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 18 fluid ounce peanut oil (for deep frying)

Method

Corn Samosas is a community recipe submitted by nandinimitra and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Knead a smooth soft dough with all the ingredients for the dough.
  • Brush with a little oil, cover with a damp cloth and keep aside.
  • Heat oil in a pan add the chopped green chillies, ginger garlic paste and then the chopped onions. Sauté for sometime and add salt to taste.
  • Add the ground coriander and the ground cumin. Add the boiled and mashed potatoes cook for 2-3 minutes.
  • Add the corn kernels mix well and sauté for about 5 minutes. Remove from fire and cool.
  • Make small balls from the dough. Roll each into small puris of 4" diameter. Cut them into half, fold each semicircle into a cone. Seal well with water.
  • Place 1 tbsp of the filling in each cone and seal the edge - the shape should be like a flat triangle.
  • Deep fry the samosas in medium hot oil till golden brown.
  • Serve hot with sauce or green chutney.
