Sumac Spiced Baked Eggs

Introduction

Oh, this is goooood! It's a regular Sunday morning breakfast which is a great filling alternative to the time consuming yet no more delicious full fried breakfast. You do need a pan with a lid that is big enough to crack 4 eggs into the tomatoey mixture - eyeball your pots before you start (mine is 28cm diameter with a glass lid so I can check on the eggies as they cook without removing the lid and letting the steam out)

Ingredients

Serves: 2 hungry people

Metric Cups
  • 4 large eggs (good quality)
  • 1 can tomato
  • ¾ teaspoon ground cumin
  • ½ teaspoon smoked paprika (good quality)
  • ½ teaspoon sumac
  • 2 cloves garlic (minced)
  • 6 baby potatoes (cut into 1-2cm cubes)
  • 3 tablespoons olive oil (if this is brunch I don't feel the least bit guilty about this amount of oil - it's two meals in one after all!)
  • 4 large eggs (good quality)
  • 1 can tomato
  • ¾ teaspoon ground cumin
  • ½ teaspoon smoked paprika (good quality)
  • ½ teaspoon sumac

Method

  • Heat the oil then throw in the potatoes and garlic, cooking until browned on all sides with the middles beginning to soften
  • Add the spices and turn well in the pan
  • Add the tomatoes and turn well in the pan, cook for a min or two adding a splash of water if too dry (you need a bit of sauce with this recipe)
  • Now for the eggs - spread the tomatoey sauce evenly in the pan then use your spatula to make four little wells
  • Into each "well", crack an egg - don't be scared, just do it! Sprinkle with lots of freshly cracked black pepper and a pinch of Maldon salt
  • Quickly put the lid on, turn heat down as low as you can then put the timer on - 2mins for runny, 3 mins for just set, 4 mins for cooked through
  • Spoon out two eggs per person and some of the tomatoey potatoes and serve with fabulous bread of your choice - I make cumin and coriander seed flatbreads yum yum yum!

  • Additional Information

    When making the egg "wells" try and make a solid wall (if you see what I mean) around the hole so that the white doesn't run out over all of the sauce. Not a disaster if it does happen a bit!
