This cake is not only fat free and vegan, it's delicious and moist!

Ingredients

Serves: 6

  • 375 millilitres wholewheat flour
  • 125 millilitres sugar
  • 2 teaspoons baking powder
  • 250 millilitres soy milk
  • 1 pinch of salt
  • 63 millilitres apple sauce
  • 250 millilitres raisins
  • 1 teaspoon rum extract

  • Preheat oven to 180 degrees.
  • Line a square 6x9 inch baking tray with baking paper.
  • Mix flour, sugar, baking powder and salt. Stir well. Add soy milk and applesauce and stir again.
  • Add raisins and rum extract and stir a final time. Pour batter in pan and bake for 40-45 minutes.
