  • 250 millilitres water
  • 2 tablespoons light brown muscovado sugar
  • 15 grams fresh yeast
  • 1 pinch of salt
  • 63 millilitres wholewheat flour
  • 188 millilitres wheat flour
  • 8⅘ fluid ounce water
  • 2 tablespoons light brown sugar
  • 1 ounce fresh yeast
  • 1 pinch of salt
  • 2⅕ fluid ounce wholewheat flour
  • 6⅗ fluid ounce wheat flour

Method

  • In a bowl, smash the yeast and mix it with the sugar. Wait a few minutes until it is completely dissolved. Add the water. Add the salt.
  • Then start to put the flour on it. The dough will be ready when it stops sticking to your hands.
  • Take a pinch of the dough, roll it into a tiny ball, put it in a glass of water. When the ball floats to the surface, the dough will be ready for the next step.
  • Shape it as you want.
  • Put it into the oven. When it gains color, it should be ready. Enjoy.
