  • Roll out puff pastry and cut into large rounds.

  • Put a tsp of cake mixture on top.
  • Put into 180c fan oven until nicely browned, about 15-20mins.
  • When cold put icing on top and also thread coconut so that it intertwines with the icing.

    • Just what I was looking for, a proper ‘London Cheesecake’ recipe! And not a cheesecake made of cream cheese! It looks a though my local Greggs Bakers stopped selling these quite a while ago, so wanted to make some myself, this recipe makes it look pretty straightforward (including the cake sponge in the middle!). I’ve told my mum and dad that I’m going to attempt them and they’re looking forward to that, they both grew up on them in the 60s/70s and introduced them to me when I was a kid in the 90s. I’ll definitely be making these within the next week, so will try to remember to report back here with how they came out. Thanks for the recipe!

    • Thank you so much for this recipe. These cakes are my mums favorite too and I've been trying to find a recipe for ages. I kept looking up cheesecakes, with no luck. The last time we ate these was in the 1980s.
