Black Pepper Strawberry Sauce

Introduction

This is a delicious strawberry sauce that will make your guests forget about chocolate. It goes down very smoothly and all of a sudden the pepper kicks in and "Wow!", everything wakes up. I tried it one night and liked it so much I went back the next night just for the sauce. Chef Jaya Loyola was kind enough to share it with me. Quartier Latin Tiradentes, MG Brazil, in front of the Bus Station.

Ingredients

Serves: 0

  • 1 cup diced strawberries
  • ½ cup superfine sugar
  • ½ cup cointreau
  • 1 pinch of white pepper (to taste)

Method

  • Place the cut strawberries in a saucepan, cover with sugar and let sit until they begin to "juice". Add the Cointreau and set over a very low flame and add pepper.
  • Cook until it reduces down to a sauce consistency, but where the bulk of the strawberries are intact. You may want to add more Cointreau or a little water - it's a matter of taste.
  • Serve over really good vanilla ice cream - it's worth going for the good stuff.

    I got this from a Chef in a very fine restaurant in Tiradentes, a little town the interior of Brazil that has become known as a culinary ghetto.
