Ingredients

Serves: makes 12 servings

Metric Cups
  • 125 grams butter
  • 1 tablespoon honey
  • 100 grams dried dates (soaked in boiling water for 5 mins, drained well and chopped)
  • 50 grams walnuts (broken)
  • 50 grams caster sugar
  • 1 handful raisins (optional)
  • 125 grams rolled oats
  • 4 ounces butter
  • 1 tablespoon honey
  • 4 ounces dried dates (soaked in boiling water for 5 mins, drained well and chopped)
  • 2 ounces walnuts (broken)
  • 2 ounces superfine sugar
  • 1 handful raisins (optional)
  • 4 ounces quick-cooking oats

Method

  • Heat oven to 180c, grease a 8in square baking tin.
  • Put honey, butter, dates and walnuts into a pan, heat until the butter melts. The dates will turn fudgy and almost melt into the butter.
  • Stir in the caster sugar and raisins if using.
  • Stir in oats and mix well.
  • Bake for 20minutes, cut into bars as soon as you take them from the oven but don't try to remove them from the tray until cooled.

    • Successful recipe, quick and tasty. I toasted the walnuts and added a handful of sultanas and about 15g toasted sunflower seeds - marvo!
