The best Zucchini Bread!

Ingredients

Serves: -

  • 3 beaten eggs
  • 250 granulated sugar
  • 250 brown sugar
  • 250 oil
  • 3 teaspoons maple extract
  • 500 peeled and shredded zucchini
  • ½ teaspoon baking powder
  • 2 teaspoons baking soda
  • 125 wheat germ
  • 563 flour (unsifted)
  • 250 chopped nuts
  • 125 coconut
  • 63 sesame seeds (for top)

Method

  • Beat eggs with sugar, add oil and flavoring.
  • Stir in Zucchini, nuts and coconut, then dry ingredients-gently-stir together-do not beat!
  • Pour in greased and floured pans, sprinkle with sesame seeds.
  • Bake for one Hour in 350 degree oven.
  • Additional Information

    I like topping it before backing with salted pumpkin seeds. The salty taste of the seeds and the sweet bread together, yummy. Also a rustic look to it.
