Cook yams, in their skins, until soft. Remove skins, and mash. Add nutmeg and salt. In a saucepan, slowly melt butter and brown sugar. Remove just under half of this mixture and stir into yams. Place in a casserole dish. To the rest of the butter/brown sugar mixture, add cornflakes. Stir together and drop on top of yams, smoothing to cover entirely. Bake 350 about 20-30 minutes.
A favourite family side dish for Autumn and Winter. Even my girls love it.
- 5 yams (large)
- 1 teaspoon nutmeg
- 1 can crushed and drained pineapple
- 1 stick unsalted butter
- ½ cup brown sugar
- 4 handfuls slightly crushed cornflakes
