Yam Casserole

Introduction

A favourite family side dish for Autumn and Winter. Even my girls love it.

Ingredients

Serves: 5-10

  • 5 yams (large)
  • 1 teaspoon nutmeg
  • 1 can crushed and drained pineapple
  • 1 stick unsalted butter
  • 125 brown sugar
  • 4 handfuls slightly crushed cornflakes

Method

  • Cook yams, in their skins, until soft.
  • Remove skins, and mash.
  • Add nutmeg and salt.
  • In a saucepan, slowly melt butter and brown sugar.
  • Remove just under half of this mixture and stir into yams.
  • Place in a casserole dish.
  • To the rest of the butter/brown sugar mixture, add cornflakes.
  • Stir together and drop on top of yams, smoothing to cover entirely.
  • Bake 350 about 20-30 minutes.
