  • 10 scallops (cleaned, without roe)
  • 100 millilitres orange juice
  • 100 millilitres lemon juice
  • 100 millilitres lime juice
  • 100 millilitres olive oil
  • 1 teaspoon long fresh red chilli pepper (finely chopped)
  • 1 teaspoon shallot (finely chopped)
  • 1 teaspoon chives (chopped)
  • 1 teaspoon pickled ginger
  • 10 scallops (cleaned, without roe)
  • 3½ fluid ounce orange juice
  • 3½ fluid ounce lemon juice
  • 3½ fluid ounce lime juice
  • 3½ fluid ounce olive oil
  • 1 teaspoon long fresh red chile pepper (finely chopped)
  • 1 teaspoon shallot (finely chopped)
  • 1 teaspoon chives (chopped)
  • 1 teaspoon pickled ginger
