Quick and Easy Fried Rice With Corned Beef and Veggie

Introduction

A very easy and delicious meal to make. You can make it with ham/chicken/spam or any left over meat, as for the vegetable you can use pretty much anything you want as long as you cook the veggies first (boil/steam or microwave it). You can use any type of rice, although I find thai rice taste best for fried rice

Ingredients

Serves: 1 - 2

  • rice (a plate, or two if you wish, preferably leftover rice from the day before)
  • 2 shallots (chopped)
  • 1 clove garlic (chopped)
  • 2 red chillies (or green, chopped - optional)
  • 1 spring onion (chopped - optional)
  • frozen sweetcorn kernels (boiled or microwaved and drained)
  • frozen peas (boiled or microwaved and drained)
  • 2 slices corned beef (or a third of a can of corned beef)
  • 1 egg
  • 2 tablespoons soy sauce
  • 1 tablespoon thai fish sauce (nam pla)
  • salt
  • pepper
  • 1 teaspoon chicken stock (granules)
  • vegetable oil (or sunflower oil)

Method

  • Fry vegetable/sunflower oil in the wok.
  • Add shallot, garlic and chilli, once it turns colour, add corned beef.
  • Then add the egg, mixed it all up.
  • Once the egg has cooked add the rice, corn, peas and spring onion.
  • Season it with fish sauce
  • Soya sauce, salt, pepper and chicken stock granules if using. You can easily adjust the seasoning while you cook, just add more soya sauce and fish sauce if it tastes a bit bland.
