Eleni's Greek Chicken Pork and Potatoes

Introduction

This is a standard Greek dish, usually made with either chicken or pork. When Eleni cooked it for me she used both!

Ingredients

Serves: As many as you like!

  • chicken pieces (1 per person)
  • potatoes (1 per person)
  • 1 lemon (juiced)
  • kalamata olives
  • olive oil
  • salt
  • freshly ground pepper

Method

  • Preheat oven to 200° C.
  • Put meat & potatoes into a roasting tin in one layer. Season everything well and sprinkle liberally with olive oil and lemon juice.
  • Add about ½ a cup of water to the tin.
  • Cook in the oven for 1-1½ hours.
  • Additional Information

    Serve with Greek salad, Kalamata olives and good crusty bread.
