Introduction

A rich, creamy dish with a touch of spice. Simple enough for a family meal, but delicious too as a supper dish to serve to friends. This recipe was passed on to me by my sister-in-law, I hope you enjoy it.

Ingredients

Serves: 4-5

Metric Cups
  • 4 chicken breasts (skin removed and cubed)
  • 1 bunch broccoli (cut into small florets)
  • 1 bunch spring onions (sliced in 1cm pieces)
  • 2 cans condensed chicken soup
  • 500 millilitres creme fraiche
  • 1 teaspoon chilli powder (to taste)
  • ½ teaspoon paprika
  • cheese (grated)
  • 1 splash of oil (for cooking)

  • 2 cans condensed chicken soup
  • 18 fluid ounces creme fraiche
  • 1 teaspoon chili powder (to taste)
  • ½ teaspoon paprika
  • cheese (grated)
  • 1 splash of oil (for cooking)

Method

  • oven temp 180 degrees
  • Heat the oil in a pan and fry the chicken until completely cooked.
  • Remove chicken and place into a casserole dish. Microwave the broccoli for about 3 mins. Drain and add to the chicken. Add spring onions too.
  • In another bowl mix together the chicken soup, creme fraiche, chilli powder and paprika. Stir well to combine.
  • Pour this over the chicken mixture and stir together very gently. Sprinkle grated cheese over the top and bake for about 35-45 mins until the cheese is bubbling and golden brown.
  • Serve with tagliatelle. (you can substitute the chilli powder with curry powder for a change and serve with rice instead of pasta)
