Hawaiian Chicken Bbq

Introduction

I learned the basics of this recipe from my friend a few days after Christmas and thought it might serve well at my New Year's party at home. My friend uses only four ingredients for her barbeque -- pineapple juice, soy sauce, brown sugar and ketchup -- but I decided to add in a bit more for a deeper flavor. I call it "Hawaiian Chicken BBQ" (my friend has no name for it actually; she says the recipe was handed on to her by her mum) only because of the pineapple component but actually it can originate from anywhere, where pineapples are grown. Try it with fragrant jasmine rice or your favorite smashed potato recipe.

Ingredients

  • 4 chicken legs
  • ½ cup pineapple juice
  • ½ cup soy sauce
  • ½ cup tomato ketchup
  • ½ cup brown sugar
  • 4 cloves crushed garlic
  • 4 leaves dried bay leaves
  • ⅓ handful black peppercorns
  • ⅓ handful cloves
  • 1 pinch of salt
  • 1 pinch of pepper

  • Whisk all the marinade ingredients together until all the sugar's dissolved. Add clean and pat-dried chicken legs.
  • Marinate preferably overnight.
  • Broil at 150-180 degrees centigrade for 30-40 minutes occasionally basting with the marinate.
  • The marinade can be flavoured with one chicken bouillon and reduced a little bit over medium-low flame. This is great as a gravy over the rice or potatoes even.
