Peanut Butter and Bacon Sandwich

Introduction

This is one of those recipes which you can enjoy effortlessly. It's perfect for a rainy day when everything seems to slow down, and you're into some kind of respite. I learned this from a friend in the States. Thought I might share it with you. It is so simple, you need not go out especially to get the ingredients, and yet it is so satisfying.

Ingredients

Serves: 1

  • 2 slices white bread (your favourite, one that is dense and creamy is excellent for this dish)
  • 2 tablespoons peanut butter (heaped, crunchy or smooth, it doesn't matter - I prefer crunchy)
  • 1 medium banana (ripe, cut lengthways)
  • 4 rashers bacon (crisply fried or baked)

  • Toast the bread slices for a minute or so, just to get the sides a little crisp and slightly golden.
  • Spread the peanut butter generously on one side, and top with the banana slices and bacon strips.
  • Cover with the other bread slice, and cut in the diagonal. I tried frying the stuffed bread with a dab of butter just like Nigella did in one of her shows, and it became even more glorious. The bread gets more integrity, not crumbly when it is toasted.
  • Plate your masterpiece with loads of your favourite sour and cream-flavoured potato chips.
