Mix together: softened butter, sugar, vanilla essences and grated lemon peel till mixture has lightened and sugar has melted In a different bowl squash the bananas with the lemon juice, once well squashed add to the butter mixture and mix together. Add eggs one at a time, beat well after each addition. Add rest of the ingredients except from the pecan nuts. Beat the mixture well until nice and smooth, only then add the pecan nuts. Cook at 180C for 20-35 min. Very important to make sure to put tin foil on top of cake while in oven to make sure top doesn't burn!!
