Ingredients

Serves: 4

Metric Cups
  • 1 green pepper (sliced)
  • 1 red pepper (sliced)
  • 1 yellow pepper (sliced)
  • 1 handful mushrooms (sliced)
  • 1 red onion
  • 1 clove garlic (to taste)
  • cherry tomatoes (a few)
  • ½ courgette (in chunks)
  • 2 handfuls spinach (roughly chopped)
  • fresh basil
  • salt
  • pepper
  • balsamic vinegar
  • extra virgin olive oil
  • cheese (grated, such as cheddar or mozzarella)
  • parmesan cheese (if you have any)
  • paprika
  • 1 green bell pepper (sliced)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 handful mushrooms (sliced)

  • 2 handfuls spinach (roughly chopped)
  • fresh basil

  • balsamic vinegar

  • parmesan cheese (if you have any)
  • paprika

Method

Tam's Veggie Pasta Bake is a community recipe submitted by Tams and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Fry onion & garlic in olive oil for 2 mins add all other veg except spinach cook until golden.
  • Season and add tinned toms a splash of balsamic vinegar and a little sugar and basil and any other herbs you wish. Bring to boil and simmer whilst the penne is cooking.
  • Just before penne is ready stir in spinach to sauce. Taste and re season.
  • Stir into drained pasta put into oven proof dish. Then glug over a little olive oil and toss. Then sprinkle and cheese/s and paprika.
  • Bake for around 20 mins until golden brown.
