Orange Duck Casserole

Introduction

The classic duck and orange combo, re-jigged!

Ingredients

Serves: 4

  • 1 medium duck (about 3.5-4 lb, cut into 4)
  • 2 ounces butter
  • 2 peeled and sliced onions
  • 2 peeled and sliced carrots
  • ½ ounce all-purpose flour
  • ⅓ pint water
  • ½ pint red wine
  • 2 oranges (grated rind and juice of)
  • salt
  • pepper

Method

  • Brown the duck in 1 oz of heated butter. Drain and place in a casserole dish.
  • Add onions and carrots to the fat, adding a little more if needed. After 5 mins stir in the flour and cook for a minute
  • Gradually blend in the water and wine, stir until the sauce boils.
  • Add the rind and juices of the oranges then season to taste.
  • Pour the sauce over the duck, cover and cook for 1.5 hours at 375oF / Gas 5, until tender.
