  • 4 cups chicken broth (homemade preferably)
  • 1 egg
  • freshly ground pepper
  • freshly grated nutmeg
  • 1 tablespoon freshly grated Parmesan cheese
  • small pasta
  • chopped fresh parsley
  • 1 litre chicken stock (homemade preferably)
  • 1 egg

  • Bring chicken broth to a boil.
  • In a small bowl, whisk egg with pepper, nutmeg and cheese.
  • Lower heat of chicken broth to a simmer and add egg mixture mixing with a fork. Egg will cook almost immediately.
  • Before serving add pasta and a little chopped parsley.
