My Lamb Shanks

I rub olive oil onto my lamb shanks, then sprinkle salt, black pepper and chilli flakes. I then light up the Weber and sear the shanks on all sides, before placing in the pan with the fried onions, garlic, tomatoes and red wine. This gives the dish a lovely smoky background.
