I adore the sparkle and taste that pomegranate seeds bring to many dishes all year round. Unfortunately pomegranates aren't always available. I buy my pomegranates when they are available and cheaper. I then open them up, release the seeds into freezer bags. Pop them in the freezer for up to three months, and just take the quantity you need for your dish, reseal the bag and pop back into the freezer. The seeds really keep their taste and colour very well.
