Roasting Chicken - For Moist Breast Meat

For 1.75 kg (3-4 pound) whole chicken, roast in a pre-heated oven set at 350°F or 177°C, for 30 minutes, and then turn off the heat and leave in the oven for another 30 minutes. After the full 60 minutes, the chicken meat will be fully cooked, but the breast meat will be still very moist. You may see the chicken bones are still slightly pink, which is acceptable for most Oriental kitchens. For cooks who insist on fully cooked meat and bones, then try roasting for 35-40 minutes.
