I love a good creamy polenta served under meatballs with a good red sauce. When I make most everything from scratch doing this with a pre-made polenta was a dream and loved by all my dinner guests. For one 16 ounce tube of polenta you will need 1/4 cup cream and 1/2 cup ricotta. Remove the outer wrapping of the polenta and cut the polenta into small cubes or break off with your fingers into small pieces and drop into the 4 quart saucepan. Turn stove top burner on to medium high add the cream and the ricotta once the polenta begins to warm and using an immersion blender blend all together, once hot it is ready to use.
