Alcohol In Chestnut Refrigerator Cake

Full question

I don't have any dark rum at home and would like to know what else I could use in Nigella's Chocolate Chestnut Refrigerator Cake? More specifically I have brandy or white rum, would either of these work without me needing to buy a bottle of something specially for this?

Our answer

Nigella's Chocolate Chestnut Refrigerator Cake (from NIGELLA BITES) is a truffle-type mixture made with chestnut puree, butter, chocolate and rum. The rum adds a little flavour but it is possible to use other alternatives instead. Brandy would be a good alternative to dark rum and whisky or bourbon could also be an option. We would however tend to avoid using any liqueurs with a strong fruit flavour. The light rum could be used but has very little flavour.

It is also possible to omit the alcohol completely if you want to serve the cake to children, or you could use 3 tablespoons of strong freshly-brewed coffee as a non-alcoholic alternative.
