Almonds In Elderflower Pudding Cake

Full question

I am allergic to almonds and I would like to know what I could replace this with in the Elderflower Pudding Cake recipe. In the past I added in extra plain flour (I use it as opposed to rice flour) but it didn’t turn out quite right so I’m not sure if I need to adjust my quantities. Many thanks.

Nigella's Lemon And Elderflower Pudding Cake (from COOK, EAT, REPEAT) is a moist sponge cake that is doused with a lemon and elderflower syrup while still warm. The cake batter includes ground almonds as the oil in the nuts helps to keep the sponge moist.

If you are only allergic to almonds then you could use another ground nut or nut flour, though the flavour may be slightly different as walnuts and hazelnuts are not quite as neutral in taste as almonds. If you are allergic to all nuts then unfortunately we can't suggest an alternative at the moment as adding extra flour will make the cake dry out. It may be possible to adjust the quantities of butter, eggs and yogurt to compensate, but we are unable to advise on that at this time. However, you may like to try Nigella's Marmalade Pudding Cake as an orange-flavoured nut-free alternative.
