Full question

Can’t wait to make the Chocolate Puddini Bonbons! BUT what could I sub the golden syrup with? I live in Italy - sourcing golden syrup has been among my big fails.

Our answer

Nigella's Christmas Puddini Bonbons are chocolate truffles made with leftover Christmas Pudding (or you could use Christmas Cake). The mixture includes some golden syrup as this adds extra sweetness and also helps with the texture of the bonbons.

If you can't find golden syrup then you could use agave syrup as an alternative. It is also possible to use a runny honey, but as honey has a distinctive taste it can be slightly overpowering. If you do use this then choose a very mild honey, such as an orange flower honey. Maple syrup has the same problem in that the flavour of the syrup can affect the overall taste of the bonbons. Agave syrup is available in many countries now and if you have a choice, go for a light agave syrup rather than a darker one.
