Nigella's Noodles With Mushrooms And Mangetout (from HOW TO EAT) is a simple stir fry that is good as a side dish or can be made into a main meal by adding chicken, prawns (shrimp), tofu or other ingredients.

Mangetout are easy to prepare and cook quickly, which helps to preserve their bright green colour. However if you don't like them or can't find them then you could use any other quick-cooking vegetable that you like. Some suggestions are thin green beans cut into short lengths, baby corn cobs cut lengthways into quarters or thin strips of red or yellow (bell) peppers. Feel free to use whatever you have to hand, but if you use firmer vegetables, such as julienned carrots, then add them to the wok at the same time as the mushrooms.
