Ingredients

Serves: 2

Metric Cups
  • 100 grams spaghetti
  • 1 large red pepper
  • 1 large yellow pepper
  • 1 large green pepper
  • 1 medium onion
  • 3 cloves garlic
  • 2 green chilli
  • 2 teaspoons olive oil
  • 1 tablespoon unsalted butter
  • salt
  • pepper
  • fresh parsley (for garnishing)
  • mozzarella
  • 3½ ounces spaghetti
  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 1 large green bell pepper
  • 1 medium onion
  • 3 cloves garlic
  • 2 green chile
  • 2 teaspoons olive oil
  • 1 tablespoon unsalted butter
  • salt
  • pepper
  • fresh parsley (for garnishing)
  • mozzarella

Method

  • Cook the spaghetti pasta as per instructions on the packet While thats cooking, all the peppers into vertical fine strips. Believe me the three colours look beautiful together. Chop the onion into vertical slices. Also cut the garlic into vertical strips and chop the chillies finely.
  • In a large based pan, add the butter, chillies and garlic. Once they start sizzling, add the onion & pepeers and stir fry them on a medium flame for 2-3 minutes. Now close the led and let the vegetables cook.
  • In the meantime if pasta is cooked, drain it and run icy cold water over it so that the pasta doesnt stick to each other.
  • Open the lid and check if vegetables are cooked. Here note that the vegetables should be firm and not over cooked. Now add olive oil and salt, stir for few minutes.
  • Then add the pasta and mix together. Add salt if required and pepper powder. Let it cook for fw minutes and then grate the cheese over it. Also add finely chopped parsley and mix together so that the cheese is evenly spread. Cook with the lid over it for 2 mins and remove it from heat.
