Are there any of Nigella's recipes that should not be baked in a fan oven? Recipes such as long bake cakes (e.g.Christmas cakes) or cookies and shortbread?

Our answer

All of Nigella's recipes that are cooked in the oven, including rich fruit cakes such as the Chocolate Fruit Cake (from FEAST) give oven temperatures in degrees centigrade for regular ovens and also the suggested setting in degrees centigrade for fan ovens. We use the standard adjustment for fan ovens, which is to reduce the heat setting by 20c. However, ovens do vary and we always suggest checking your oven's handbook for the manufacturer's own recommended adjustments. It is also worth bearing in mind that some fan ovens can still cook food more quickly, even after the temperature adjustment. We also generally try to give a time range and indicatiors for when something is cooked, rather than a very specific time, as all ovens vary (both regular and fan).

Most of the cakes and biscuits or cookies have been tested in both regular and fan ovens. Consequently, we do not particularly believe that any of NIgella's recipes should not be cooked in a fan oven. For US convection ovens we suggest checking the manufacturer's handbook for guidance, particularly as some models have digital programmes that automatically adjust temperatures for convection cooking.
