Baking Chocolate Mint Cookies

Full question

My Chocolate Mint Cookies were disappointing! They did not spread during baking so I ended up with choc chip domes which were not soft or cookie like in texture. Usually have success with all of Nigella’s recipes, what went wrong?

Nigella's Chocolate Mint Cookies (from NIGELLA EXPRESS) are chocolate cookies that are flavoured with a mint chocolate glaze. The cookies have a slightly cake-like structure rather than being very squidgy and soft in the centre, due to the ratios of butter to flour and cocoa powder. They should spread slightly when they bake but will remain slightly domed and will not be flat.

If the cookies did not spread at all then it could be that the oven was slightly too hot. This will make the outside of the cookies set fairly quickly and they will remain domed. If you have a fan oven then they can still bake more quickly, even if you have already adjusted the temperature. Also if the cookie dough is very cold when baked then it will spread less. We would suggest next time reducing the oven temperature by 10c (25F) and you may need to give the cookies a slightly longer cooking time. However the cookies could be flatter and thinner than the ones in the original recipe.
