Banana Bread As A Round Cake

Full question

I don’t have a loaf tin and I’m in France, isolating. Can I use a loose bottomed, round cake tin for the Banana Bread? If so what would the cooking temperature and time alterations be?

Our answer

Nigella's Banana Bread (from HOW TO BE A DOMESTIC GODDESS is baked in a 900g/2-pound loaf tin that has a capacity of approximately 1.9 litres (8 cups). The Banana Bread probably can be baked in a round tin with a similar capacity and this would be a springform tin with a 20cm (8-inch) diameter or a slightly shallower loose-bottomed tin with a 23cm (9-inch) diameter. You can check the capacity of your tin by filling it to the top with water and measuring how much water it takes. Bear in mind that the cake will not be particularly deep.

Round cakes usually take less time that loaf cakes to bake and you should increase the oven temperature to 180c/160c Fan/350F. The baking time should be approximately 30-40 minutes, but check every 5 minutes after 30 minutes. A cake tester inserted into the centre of the cake should come out clean and the cake should be shrinking away from the sides of the tin. We would however mention that we have not tried the Banana Bread in a round tin, so are unable to guarantee the results. We would also suggest looking at Nigella's Chocolate-Topped Banana Cake recipe, as this is baked in a round cake tin and may be better suited to the tin that you have.
