Full question

I made the Salted Chocolate Tart and it was delicious. I would like the Oreo base to be firmer. Does adding more butter to the biscuit base make the texture less crumbly?

Our answer

Nigella's Salted Chocolate Tart (from SIMPLY NIGELLA) has a rich chocolate cream filling and a chocolate crust made from crushed chocolate sandwich cookies, such as Oreos. The cookies are processed with plain/dark (bittersweet) chocolate and soft butter to give a mixture that holds together but melts in the mouth.

Make sure that you press the crumb mixture firmly into the base and sides of the tart pan and it is easier to leave the tart on the pan base to serve. Adding a little extra butter can make the crumb mixture firmer, but adding too much can make it a bit greasy. If you do want to add some extra butter then we would suggest adding only a further 15g (1 tablespoon) to give 65g (4 tablespoons) total.
