Our answer

Nigella's American Breakfast Pancakes (from HOW TO BE A DOMESTIC GODDESS) are thick, fluffy pancakes that are wonderful doused with maple syrup. The pancake batter is enriched with the addition of some melted butter.

For this recipe, and for most of Nigella's recipes, we prefer to use unsalted butter as it allows the cook adjust the salt level to their own taste. If salted butter is the only option then we suggest omitting the pinch of salt from the ingredients for the batter. Unsalted butter is also better for cooking the pancakes as salted butter could also make the pancakes taste too salty. If salted butter is the only option then we would suggest using a flavourless vegetable oil, such as sunflower oil, instead.
