Cake Without Cranberries

Full question

My mum in law is medically not allowed to have cranberries or their juice. What can I use instead, especially for the Red Cabbage and Date & Marmalade Cake?

Our answer

Nigella's Date and Marmalade Christmas Cake (from SIMPLY NIGELLA) is made with a combination of medjool dates, dried cranberries and sultanas (golden raisins). For this cake you could replace the dried cranberries with an equal quantity of dried (sour) cherries. Otherwise we would suggest using the same quantity of raisins, or extra sultanas. The cake doesn't need maturing so can be made just ahead of Christmas.

For the Red Cabbage With Cranberries (from AT MY TABLE) we would suggest replacing the dried cranberries with an equal quantity of raisins and the fresh or frozen cranberries with an equal quantity of peeled, cored and diced apple. Try to use cooking apples and if these are not available then use a sharp apple such as Granny Smith.
