Full question
I’ve been trying to find a good espresso martini dessert. I wondered if I could add alcohol and espresso to the Instant Chocolate Mousse to recreate the flavour I’m looking for?
Our answer
Nigella's Instant Chocolate Mousse (from NIGELLA EXPRESS) uses a combination of melted marshmallows, butter, cream and chocolate to make a really easy dessert. The gelatine in the marshmallows helps the mousse to set, giving the light and airy texture.
It would certainly be possible to replace the 60ml (1/4 cup) of hot water with hot, freshly-brewed espresso, to give a mocha mousse. But we are not sure that alcohol should be added as well as the extra liquid and alcohol will affect how the mousse sets and it could end up being too runny. However, it might be an idea to put the mocha mousse into martini glasses and, once it has set, serve it with a thin layer of a coffee cream liqueur on top and garnished with some coffee beans, to give the impression of an espresso martini.
