Would it be possible to add some stem ginger in syrup and/or a teaspoon of the syrup (instead of the vanilla extract) to the White Chocolate Cheesecake mixture, or would this be too overpowering?

Our answer
Nigella's White Chocolate Cheesecake (from AT MY TABLE) is a no-bake cheesecake that has an almost mousse-like filling that is set on a ginger bisuit (ginger snap) base. The vanilla flavour of the white chocolate is boosted by some extra vanilla extract.
You could try adding some very finely chopped stem ginger to the cheesecake filling, folding it in with the lemon juice and vanilla extract, though there is a risk that the pieces of ginger may sink towards the bottom while the cheesecake sets. We are not sure that adding stem ginger syrup to the filling will really have that much effect on the flavour of the cheesecake and if you did add enough to give it a more ginger flavour then it could make the filling too runny. Instead, we would suggest offering some chopped stem ginger and syrup in a bowl for people to spoon over the slices of cheesecake as they wish. You are more likely to notice the ginger flavour in contrast to the vanilla cheesecake filling and the chopped ginger can be an attractive garnish.
